Watermelon & Feta summer salad

Greek-inspired salad. Perfect dish for the upcoming hot days.

Refreshing, delicious and satisficing.

  • 400 gr of watermelon cut into 2 cm cubes

  • 2 tbsp olive oil

  • Feta cheese roughly cut into 2 cm cubes

  • 15 leaves of mint, chopped

  • 15 of basil, chopped

  • 3 tsp pumpkin seed toasted in the pan until it starts to pop

  • Kalamata olives, stone removed & cut into batons

  • Pinch of Sumac

Add 2 tbsp olive oil to watermelon; mix in 1/2 of the feta along with most of the herbs. Transfer the watermelon to a serving bowl, scatter the rest of the feta over the top, plus olives and sprinkle with pumpkin seeds, mint and basil!
