Purple Potato with Rose Harissa Passata, Lemon Yogurt & Dukkah.

Ingredients👇
💫Stoke Purple sweet potato @waitrose

For passata 👇
💫350g Passata @napolina
💫1tsp Wycombe Chef’s table Rose Harissa Rub
💫20ml olive oil

For lemon yogurt 🍋👇
💫3tbsp yogurt
💫1/4 lemon zest
💫1/5 lemon juice
💫1tsp olive oil
💫salt&pepper

1. Preheat oven to 180C*

2. Wash well sweet potato. Rub all over with olive oil and place in the oven. Bake 20 - 30 minutes until potatoes are tender.

3. While potatoes are baking, make lemon yogurt by mixing all ingredients. Refrigerate until ready to use.

4. For passata, on the sauce pan Mix all ingredients well and cook for 20min.

5. When potatoes are baked, remove them from the oven and let them cool slightly. Peel them and start plating.

First, spread passata on the plate and put your potato’s on the top of passata and finish the dish by drizzle of lemon yogurt and sprinkle of Dukkah& Rose petals 👌
