Purple sweet potato & miso sour cream

Have you ever made purple sweet potatoes? They're delicious, a little less sweet than regular sweet potatoes. Purple sweet potatoes have a rich and more complex flavour and full of nutrition - vitamin A, vitamin C and fiber.
This dish is so easy to make and to be honest; you wouldn't need anything also. Fantastic flavours!
Ingredients👇
💫Stoke Purple sweet potato @waitrose
For Miso Sour cream👇
💫1/5 tsp of Brown miso
💫4 tbsp of sour cream
1. Preheat oven to 180C*
2. Wash well sweet potato. Rub all over with olive oil and place in the oven. Bake 20 - 30 minutes until potatoes are tender.
3. While potatoes are baking, mix together sour cream and brown miso paste with a fork until well combined. Refrigerate until ready to use.
4. When potatoes are baked, remove them from the oven and let them cool slightly. Peel them and start plating.
First, spread miso sour cream and put your potatoes on the top of the miso sour cream and finish the dish with a generous sprinkle of Shichimi Togarashi.
