Hummus
This authentic, simple and straightforward hummus recipe is so much better than any store bought product because you made it! Nothing is more satisfying than freshly made silky hummus,
Ingredients for hummus:
800 gr cooked chickpeas tin, this will give you 480gr drained
3 tbsp of the chickpea water
1 garlic cloves, minced
3 ice cubes
60 gr Al Nakhil tahini
1 tsp cumin seed (toasted & ground)
Zest from 1/2 lemon
Juice of 1 lemon
40 ml extra virgin olive oil
Salt to taste
Toppings:
1 tbsp of Dukkah
1 tbsp chopped coriander
3 tbsp extra virgin olive oil
Pinch of smoked paprika
Salt to taste
INSTRUCTIONS
Before we start with the hummus, let make the topping, take 3 or 4 tbsp of chickpeas and mixed them with chopped coriander, extra virgin olive oil, paprika and salt to taste and set aside. Add the remaining chickpeas and garlic to the food processor for 2 minutes, then add all the other hummus ingredients and puree for 5 minutes until silk smooth, check the seasoning "Et Voila."Spread the hummus at the centre of the plate, using a tbsp swill it to the edge of the plate making a slight dip in the middle, scatter the marinated chickpeas around, make sure to drizzle generously with the paprika oil and to finish, sprinkle some dukkah on top.
